The Mediterranean coast offers a host of incredible flavours to delight your palate. Here are just some of the essential dishes.<\/p>\n<p class=\"p2\">Cal\u00e7ot are sweet, white, flame-grilled spring onions. The traditional menu for this event includes salad, tomato bread and cold meats, <strong>cal\u00e7ots<\/strong> with <strong>romesco<\/strong> (a hazelnut, almond and red pepper-based sauce) and locally produced meat. It originated in the Valencia Region, where you&#8217;ll be able to enjoy some of the best versions. This delicious rice dish is cooked in a paella, a special shallow pan with two handles, and there are a number of varieties depending on the ingredients used.<\/p>\n<p class=\"p1\">The most traditional recipe uses chicken, rabbit and vegetables and the rice<br \/>\nshould be nice and loose and full of flavour. There are other popular versions<br \/>\nlike <em><strong>paella mixta<\/strong><\/em> (with meat and seafood) and <em><strong>paella marinera<\/strong><\/em>, made with fish and seafood. It can be cooked in many different ways and is an essential part of coastal cuisine, prepared right by the beach with simple ingredients. On the Costa del Sol, <strong>skewered sardines<\/strong> are the star of the show. This is a speciality in M\u00e1laga and consists of fish skewered on a cane and grilled over the embers.
