If there is a typical dish in Galicia it must be 'Pote Gallego'. For newcomers, this is a soup prepared with local green vegetables (turnip tops, kale or cabbage) and potatoes. Pork fat is added to make it more filling (you can also use chorizo sausage or bacon) and it can be thickened with flour.
